Gryphus Chardonnay

Vineyards: Sitting on the foothills of the Andes mountain range in a village San Clemente
Ageing: 20% fermented and aged for 4 months in 2nd hand French oak barrels, the remaing 80% aged on sur lie 100% stainless steel

Intense youthful aromas of sweet pineapple, juicy papaya, succulent peach, and hints of vanilla. This is a wonderfully refreshing wine with topical fruits and summer freshness one would be tempted to drink this wine all on its own….and you would be right. You would also be right to pair this fruit forward Chardonnay with roasted salmon prepared and garnished with a chili- mango salsa, creamy pastas, as well as ham or cheese based salads...When it comes to this wine the only secret is it should be enjoyed…with a smile.

Winemaking

Gentle machine harvesting during early morning in order to preserve delicate varietal character of the Chardonnay. Gentle whole cluster pressing. Settling for 24 hours, racked off its heavy lees before being inoculated with special selected yeast strains. Temperature controlled fermentation at 14-16°C for 18-20 days 20% in 2nd hand French oak barrels and 80% in Stainless stell tanks. The wine did not undergo malolactic fermentation in order to preserve maximum varietal character. Clarified and filtrated before bottling in June 2016.

Tasting notes

Brilliant pale lemon color with golden rim. Intense youthful aromas reminiscent of pineapple, papaya, peaches with hints of vanilla, and honey. The palate is dominated by refreshing fruit, layered texture with pleasant concentration and with harmonious balanced lingering sweetness and mouthwatering acidity.
